- Origin
Mustard is a very old spice. It had been known and used in ancient Rome. Mustard paste was prepared by mixing grinded mustard seeds with wine.
The burning qualities of mustard are largely due to its specific chemical content. When mustard seeds are mixed with water, some components transform into the others, producing the characteristic burning taste and smell which can make one cry even from the distance. Mustard seeds contain approximately 35% of oil. For the manufacturing of mustard oil, seeds are peeled and pressed. The remains are dried and grounded, which make the mustard powder. This powder is sold as such or used for the production of the mustard paste which can be found in any shop. Mustard gives spicy taste to the dishes, which leads to the increased production of the gastric juice and improved digestion.

- Usage
Homemade mustard paste can be made of mustard powder. Powder is mixed with boiled water and left for 12-24 hours in order to reduce the bitter qualities of the powder. After that, the water is removed and vinegar, salt, sugar and vegetable oil are added. When the paste is ready it should be moved to the glass container and closed tightly.

- Storage
If the paste is stored in a dark and cool place in a tightly closed container it retains its qualities for a long time. Under the influence of light and higher temperature it can acquire unpleasant scent and becomes dark and unsuitable for consumption.
