Mustard |
- Origin Mustard is a very old spice. It had been known and used in ancient Rome. Mustard paste was prepared by mixing grinded mustard seeds with wine. The burning qualities of mustard are largely due to its specific chemical content. When mustard seeds are mixed with water, some components transform into the others, producing the characteristic burning taste and smell which can make one cry even from the distance. Mustard seeds contain approximately 35% of oil. For the manufacturing of mustard oil, seeds are peeled and pressed. The remains are dried and grounded, which make the mustard powder. This powder is sold as such or used for the production of the mustard paste which can be found in any shop. Mustard gives spicy taste to the dishes, which leads to the increased production of the gastric juice and improved digestion.
