This simple ingredient makes holiday entertaining easy and tasty
Fresh Canadian mushrooms not only offer up flavour this holiday season, but nutrition and ease of preparation as well.

(NC)—With holiday season in full swing, have you thought about what appetizers to serve at your next get together? Why not fresh Canadian mushrooms? Fresh mushrooms are easy to prepare, flavourful, elegant, and not to mention packed full of nutrients.Including fresh mushrooms is a great way to add some tasty nutrients to your holiday meals. One hundred grams (100 g) of fresh mushrooms counts as 1 serving of Fruits & Vegetables. Mushrooms are also low in calories, carbs and fat, they provide vitamins, minerals, fibre, antioxidants, and are the only vegetable with Vitamin D. Not to mention they have no cholesterol or sodium.

Savoury Mushroom Crostini
In a hot pan sauté 1 tbsp minced shallots, 1 tbsp minced garlic, 1 tsp minced thyme, 1 tsp minced basil and 1 cup fresh sliced assorted mushrooms for about 4-5 minutes. Add 1 tbsp brandy to pan and flambé. Stir in 2 tbsp chevre (goat cheese) until melted. Serve on lightly toasted baguettes or melba rounds.

Mushroom Kebabs
Thread mushrooms onto several bamboo skewers; brush with oil and broil, turning often. Remove mushrooms from skewers onto platter. Serve hot, with a ranch style dressing for dipping. Tasty and simple.

Mushroom Fondue
Fondue is back. Especially the melted Swiss cheese version served with fresh mushrooms, whole or halved. Skewer and dip mushrooms (whites and browns are delicious) into your favourite cheese fondue mixture. Serve with dry white wine and let the conversation begin.

Mushroom Bruschetta
Need something that you can prepare ahead? Combine 2 cups chopped assorted mushrooms with minced garlic, chopped fresh parsley, fresh basil, 3 tablespoons of olive oil, and pepper to taste. Refrigerate several hours or overnight. Spoon onto lightly toasted slices of fresh bread. Sprinkle with grated mozzarella and Parmesan cheese. Broil until mushrooms are cooked and cheese melts. No matter what recipe you use, your guests will be not only entertained but also amazed by the versatility of the mushroom.
