Chili Chicken and Cucumber Salad

Total preparation time: 10 minutes

Pam cooking spray

1 tbsp vegetable oil

¾ lb boneless, skinless chicken breast, cut into thin strips (approximately 2 breasts)

½ cup VH Thai Market Spicy Thai Chili Sauce

2 cups peeled English cucumber, diced

8 cups Romaine lettuce, chopped

2 tbsp fresh mint, finely chopped

1 cup yellow pepper, finely chopped

½ cup salted cashews, coarsely chopped

½ cup creamy cucumber dressing

Spray large sauté pan with Pam cooking spray. Heat pan over medium-high heat. Sauté chicken until browned and cooked through, about 10 minutes. Add VH Spicy Thai Chili sauce to pan and toss chicken to coat.

In a large bowl toss cucumbers, lettuce, mint, pepper, cashews and dressing.

Divide salad between four plates and top with chicken.

Serves 4.
