Cous cous salad

Preparation time: 30min
Serves 6-8
Allergens: wheat

Ingredients:
1 cup cous cous (uncooked)
1 can (540 ml) chick peas
2 cups chopped cucumber
1/2 cup chopped red onion
1/2 cup fresh dill chopped
The juice of 4 limes
1/4 cup olive oil
1 tablespoon vinegar
1 1/2 tablespoon of salt

Instructions

In a medium saucepan, bring 1 cup of water to boil
Remove from heat and add cous cous. Let it sit for 5 minutes, fluff of with a fork and transfer to a salad bowl
Drain chick peas and rinse with water to remove excess liquid from the can
Add cucumber, red onion, dill, lime juice, olive oil, vinegar and salt. Mix well Cover bowl with plastic wrap or a lid and let it sit in the fridge for about 10 to 15 minutes. Serve
