Carrot soup with coriander
Preparation time: 10min
Cooking time: 30-40min
Serves 6 persons

Ingredients:
50g butter
900g carrots
1 onion
½ tsp powdered coriander
½ tsp ground coriander seeds
½ tsp ground ginger
½ tsp mace
1.4 litres vegetable stock
Salt and pepper to taste
150ml single cream
Carrots for decoration

Directions:
- Cut carrots in half circles and chop the onion finely. Melt the butter in a saucepan and stew carrots and onion for 5 minutes

- Add coriander, ginger and mace and stew for another minute. Pour in the stock and until vegetables become soft. Turn into a puree in a food processor.

- Boil once more, add cream. Cut various shapes out of fresh carrots and use for decoration
