Stuffed aubergines
Preparation time: 20min
Cooking time: 45min
Serves 2 persons

Ingredients:
2 average sized aubergines
100g smoked ham
75ml olive oil
40g butter
1 sliced in circles vegetable marrow
25g flour
300ml milk
50g grated cheddar
salt and pepper to taste
4 tbsp breadcrumbs
1 tbsp chopped parsley
2 tbsp grated parmesan

Directions:
- Cut the aubergines lengthwise, remove the insides and cut into cubes. Cut ham into cubes as well. Heat 3 tbsp of olive oil and fry aubergine half in low heat until they become slightly soft. Remove the excess of oil with paper towel.

- Pour the remaining olive oil onto a frying pan and stew the aubergine cubes for 5min. Place them on a paper towel.

- Melt 15g of butter in a saucepan and fry the ham for 3-5min. Add vegetable marrow circles and stew for another minute. Remove ham and marrow vegetable and put the remaining butter into the same saucepan. Once it has melted, add flour and milk. Boil until the sauce becomes homogenous. Add 2/3 of cheddar.

- Heat the oven to 200°C. Mix aubergine cubes, ham and marrow vegetable. Pour in the sauce; add breadcrumbs, cheddar, parsley and parmesan. Bake on the top shelf for 20-25min.
