Chinese style ribs
Preparation time: 20min+marinating
Cooking time: 17-23min
Serves 4-6 persons

Ingredients:
700g pork ribs
1tbsp sugar
˝ tsp salt
˝ tsp ground Sichuan pepper
2 tsp starch
1 tbsp soy sauce
2 tbsp rice wine or cognac
2 tbsp oil
1 tbsp sesame oil
2 crushed garlic cloves
3 chopped spring onion leaves
2 tbsp yellow French beans paste
300ml hot chicken stock
1 green bell pepper

Directions
- Remove fat from the ribs; put the ribs into a shallow heat resistant pot.

- Mix salt, Sichuan pepper, sugar, soy sauce, rice wine and starch. Marinate the ribs for 1 hour.

- Heat regular and sesame oil in a wok and brown spring onion rings and garlic; add ribs and French beans paste. Fry, constantly stirring.

- Pour in the stock and boil. Cook for 15-20min, until the liquid evaporates. Add bell pepper (cut in diamond shapes) and stew for another 2-3min. Serve while hot, decorated with spring onion leaves.
