Recipe for the Fresh Seafood Lover's Delight: Green Curry Halibut

Ingredients:

• 1 Jar (400 mL) PC® Thai Green Curry Cooking Sauce
• 4 Carrots, thinly sliced
• 2 Sweet red peppers, thinly sliced
• 2 Green Onions, thinly sliced
• 280 g PC® Blue Menu® Wild Skinless Halibut Fillets (thawed)

Instructions:

1. Place sauce in 10-inch (25 cm) frying pan. Bring to a boil. Add carrots, red peppers and green onions to pan; cook over medium heat until tender-crisp, about 4-5 minutes

2. Add halibut, making sure fish is covered by sauce and vegetables. Reduce heat to low, cover and cook 5-7 minutes or until fish flakes easily

3. Serve garnished with lime wedges and additional sliced green onion, if desired

Serves four.
