Open-Faced Goat Cheese, Sweet Pepper and Arugula Sandwich

(NC)—A healthy sandwich doesn't need to be boring. This one not only tastes great, it's super easy and full of healthy whole grains. Consider combining a selection of cancer fighting foods such as leafy greens and fresh peppers to double up on nutrition. For a more traditional sandwich, add a little more arugula and top with another slice of bread.

2 slices of your favourite whole grain 2
Country Harvest bread
2 sweet peppers, preferably 1 red and 1 yellow or orange, thinly sliced
½ cup thinly sliced red onion 125 mL
1 garlic clove, minced 1
Freshly ground black pepper
2 tsp olive oil 10 mL
¼ cup creamy goat cheese, at room temperature 50 mL
½ cup baby arugula or baby spinach 125 mL

1. Heat oil in a large non-stick frying pan over medium heat. Add peppers and onion. Stir occasionally until both are very tender, lowering heat as needed, about 8 minutes. Stir in garlic and cook 1 minute. Season with pepper.

2. Toast bread. Spread with goat cheese. Top with warm peppers and finish with arugula.

Makes 2 open-faced sandwiches.
